Instant Semolina (Sooji/Rawa) Dosa Recipe

Ingredients:-

  1. 2 cup rava / semolina / suji
  2. coarse 1 cup rice flour
  3. fine1/2 cup maida / all purpose flour
  4. 1 tbsp curd
  5. 1 tsp salt
  6. 6-7 cup water
  7. 1 chilli
  8. finely chopped 1/2 tsp black pepper
  9. crushed Few curry leaves, finely chopped oil, for roasting

How to make Semolina (Sooji/Rawa) Dosa:-

  1. Firstly, in a large mixing bowl take 2 cup rawa, 1 cup rice flour and 1/2 cup maida.
  2. Add salt, green chili and black paper Powder and add 1 cup of water
  3. Mix well making sure there are no lumps.
  4. Add few curry leaves and curd and mix well.
  5. Add 4 cup water and prepare a watery consistency batter.
  6. Rest the batter for 20 minutes making sure the rawa has absorbed water.
  7. Mix well making sure the batter is thin watery consistency.
  8. Now carefully pour the dosa batter over very hot tawa.
  9. Also spread a tsp of oil.
  10. Lower the flame and cook until the dosa turns golden and crisp.
  11. Finally, fold the dosa and serve dosa.
  12. Immediately with tomato chutney or coconut chutney.

Cumin Cookies Recipe

Ingredients for making Cumin Cookies:-

  1. Wheat Flour – 1 Bowl
  2. Ghee -1/4 Bowl
  3. Powder Sugar – 1/4 Bowl
  4. Roasted Cumin Seeds – 1 tbsp
  5. Milk -3 to 4  tbsp
  6. Baking Powder – 1 tbsp
  7. Salt – 1 pinch (as per your taste)

How to make Cumin Biscuits:-

  1. Take a large bowl and combine Ghee with sugar. Whisk them together until the mixture becomes fluffy and creamy. Keep it aside.
  2. Now add flour and cumin seeds in a deep bowl. Sprinkle salt and mix the ingredients well. Then, add this mixture in the butter-sugar mixture and add milk. Knead the mixture for a stiff dough.
  3. Use a rolling pin to roll out a thick sheet of dough in a rectangle shape. Place this sheet on a glazed baking tray and use a cookie cutter to cut out small circles of the dough.
  4. Place the baking tray in oven and bake for 10 minutes with using convention mode 160 degree temperature or until the biscuits turn golden brown in color. Remove from oven, store in an air-tight container and serve when required.

Mango Shrikhand Recipe

Ingredients:-

  1. 3 to 3.5 cup curd (yogurt)
  2. 2 mangoes, chopped (aam)
  3. ½ cup sugar or as required Some Dry fruits

Instructions:-

  1. Hung the curd in a muslin, cheese cloth or kitchen napkin for 3-4 hours.
  2. Puree the mangoes.
  3. Add the thick hung curd to the blender along some Dry fruits and sugar.
  4. Blend till smooth.
  5. Pour mango shrikhand in individual serving bowls. spared some Dry fruits.
  6. Chill and serve the amrakhand.

Notes-

1. You can make any other shrikhand in a similar way.

2. Even dry fruits of your choice can be added to this shrikhand.

3. You can also use tinned mangoes or mango pulp. 2.For making any shrikhand, always use fresh yogurt. Home made yogurt is the best. I have made the recipe with homemade yogurt. The fresh homemade curd is used to make hung curd.

Dalgona Mango Recipe

Ingredients :-

  1. 2 mangoes
  2. 1 cup cold milk
  3. 2 teaspoon powder sugar
  4. Some ice cubes

Instructions:-

  1. Wash peel and squeeze both mango ,some ice cubes and 2-3 spoon milk and transfer in mixture.
  2. Mix this mangoes and make a thick Creamy paste.
  3. Wash peel and squeeze mango, ready mango puree.
  4. Take a glass add 2-3 spoon Creamy mango puree after add half glass cold milk add some ice cubes then add 2-3 spoon mango puree.
  5. Garnish some dry fruit 6-Serve.

Bakery Style Nan-Khatai Recipe

Nankhatai, is a traditional Indian biscuit. These eggless cookies is crunchy & delicious with  aroma of cardamom. Made with, to name a few ingredients- Maida, Besan, Atta, and nankhatais with desi ghi. Here is the beginning of my Bakery Style Recipes, authentic bakery style recipes. For now, make these biscuits

Ingredients

  • 130g / 1 cup – Maida / Plain Flour
  • 60g / ½ cup – Besan / Gram Flour
  • 30g / 2 ½ tbsp. – Suji / Semolina
  • 80g / ½ cup – Powder sugar / Boora ( according your taste)
  • 1 pinch – Salt
  • 1 pinch – Cardamom Powder
  • 115g / ½ cup – Ghee /  Melted Butter
  • Almonds to Top

Method

  1. In a bowl, add in the maida, besan, suji, powder sugar, salt & cardamom powder and mix well.
  2. Pour in the ghee and form into a dough.(there are not used water and milk)only used desi ghee Divide into same portions.
  3. Shape into round peda like shape & place in a baking tray, top with nuts.
  4. Bake in a preheated oven for 15 mins at 150 Degree C in convection mode / 15 mins @ 150 C  / low flame in idli cooker for 17-18 mins.
  5. Best served with a hot cup of chai.

Expert Tips

Make sure dough is formed and has a consistency as shown in given video, you can add more ghee if required.

Can be baked without oven in a idli cooker, in idli plates. Preheat cooker  and kadhai with 1 1/2 cups of salt, once hot, place the idli plates and bake for 17 to 20 mins. After 15 min (please check your Nankhatai)
