Mango Shrikhand Recipe

Ingredients:-

  1. 3 to 3.5 cup curd (yogurt)
  2. 2 mangoes, chopped (aam)
  3. ½ cup sugar or as required Some Dry fruits

Instructions:-

  1. Hung the curd in a muslin, cheese cloth or kitchen napkin for 3-4 hours.
  2. Puree the mangoes.
  3. Add the thick hung curd to the blender along some Dry fruits and sugar.
  4. Blend till smooth.
  5. Pour mango shrikhand in individual serving bowls. spared some Dry fruits.
  6. Chill and serve the amrakhand.

Notes-

1. You can make any other shrikhand in a similar way.

2. Even dry fruits of your choice can be added to this shrikhand.

3. You can also use tinned mangoes or mango pulp. 2.For making any shrikhand, always use fresh yogurt. Home made yogurt is the best. I have made the recipe with homemade yogurt. The fresh homemade curd is used to make hung curd.

Nankhatai, is a traditional Indian biscuit. These eggless cookies is crunchy & delicious with  aroma of cardamom. Made with, to name a few ingredients- Maida, Besan, Atta, and nankhatais with desi ghi. Here is the beginning of my Bakery Style Recipes, authentic bakery style recipes. For now, make these biscuits

Ingredients

  • 130g / 1 cup – Maida / Plain Flour
  • 60g / ½ cup – Besan / Gram Flour
  • 30g / 2 ½ tbsp. – Suji / Semolina
  • 80g / ½ cup – Powder sugar / Boora ( according your taste)
  • 1 pinch – Salt
  • 1 pinch – Cardamom Powder
  • 115g / ½ cup – Ghee /  Melted Butter
  • Almonds to Top

Method

  1. In a bowl, add in the maida, besan, suji, powder sugar, salt & cardamom powder and mix well.
  2. Pour in the ghee and form into a dough.(there are not used water and milk)only used desi ghee Divide into same portions.
  3. Shape into round peda like shape & place in a baking tray, top with nuts.
  4. Bake in a preheated oven for 15 mins at 150 Degree C in convection mode / 15 mins @ 150 C  / low flame in idli cooker for 17-18 mins.
  5. Best served with a hot cup of chai.

Expert Tips

Make sure dough is formed and has a consistency as shown in given video, you can add more ghee if required.

Can be baked without oven in a idli cooker, in idli plates. Preheat cooker  and kadhai with 1 1/2 cups of salt, once hot, place the idli plates and bake for 17 to 20 mins. After 15 min (please check your Nankhatai)
