Eggplant with Curd Recipe

Ingredients required to make Eggplant with Curd:-

  1. 4-5 medium size Eggplant cut into 1/4 inch thick slices.
  2. 2 tbsp Oil
  3. 2 Cups of thick curd
  4. 1 tbsp Red Chili powder
  5. 1/2 tbsp Garam Masala
  6. 1 tbsp Red Chili Flakes
  7. 1 tsp Chat Masala
  8. 1 tsp Coriander powder
  9. 1/4 tsp turmeric
  10. 1 tsp Cumin powder
  11. 1/2 tsp Black pepper powder
  12. 1 tsp kitchen King masala
  13. Salt to taste
  14. 1/2 Cup Water
  15. Chopped Coriander for garnish.

Instructions:-

  1. .4-5 medium size Eggplant cut into 1/4 inch thick slices and spread some salt.
  2. In a pan, add 1 tbsp oil and shallow fry the eggplant slices on medium on both the sides, until done.
  3. This will take around 5 minutes each side.
  4. In the meanwhile, in a pan add 2 tbsp oil.
  5. Once medium hot add all the masala’s and keep on stirring the mixture. We do not want the masala to be burned.
  6. Add water a little by little and let the masala cook on medium for around 10 minutes.
  7. Once all the eggplant are shallow fried keep it aside and let the masala cool down a bit.

Assembling :-

  1. In a wide dish, first spread around a teaspoon of masala.
  2. Then arrange a layer of eggplant.
  3. .Then add the curd on top (Leaving about 1 tablespoon).
  4. Repeat the above steps again, i.e. add some masala, eggplant and some curd and again repeat same.
  5. Top it up with the remaining curd.
  6. Garnish with coriander and serve.
